Mini Meatball Subs

Ingredients: 

  • 1 lb. Nolan Ryan Beef 80/20 Ground Chuck
  • 1 lb. 80/20 Ground Pork
  • 1 cup Egg Beaters
  • ½ cup Whole Milk
  • 1 cup Panko Bread Crumbs
  • 1 cup Parmesan Cheese
  • ½ cup Chopped Onion
  • ¼ cup Minced Garlic
  • 1 cup Flat Leaf Parsley
  • 2 tsp Salt
  • 2 tsp.Black Pepper
  • 4 tsp. Italian Seasoning
  • Martin's Potato Rolls, slider buns 
  • 4 slices provolone cheese 
  • 1/2 cup marinara sauce 

Instructions: 

  1. Combine spices, ground chuck, ground pork, egg beaters, milk, bread crumbs, parmesan, garlic, onion, and parsley in a bowl. 
  2. Form 1 inch meatballs, place in a cast iron skillet and bake at 350ºF for 15-20 min until internal temperature reaches 145ºF. 
  3. Spread marinara sauce on buns. Add meatballs and top with provolone. Bake in the oven for 3 min or until cheese is melted.
