            Hatch Green Chile Beef & Beer Queso

Serves: 6-8


  • 1 lb Nolan Ryan Beef Ground Chuck
  • 1/3 cup smoked Hatch Green Chile peppers, diced
  • 1 tbsp Nolan Ryan Beef Fajita Seasoning 
  • 1 tbsp butter
  • 1/3 cup diced red onion
  • 1 tbsp flour
  • 1 cup of light beer 
  • 1 cup of cheddar cheese, shredded or cubed
  • 1 cup of pepper jack cheese, shredded or cubed
  • 1 block of cream cheese, cubed  




  1. Season ground chuck with Nolan Ryan Beef fajita seasoning. Brown the ground chuck over medium high heat.
  2. Heat up butter in a medium saucepan over medium heat, then add onion. Let it soften and then add the ground chuck and smoked chilies. 
  3. Add the flour and stir together for 1 minute. 
  4. Add the beer and bring to a simmer, then reduce to low. 
  5. One at a time, add in the cheeses and let them melt together. 
  6. Stir until combined. Garnish with excess ingredients and enjoy!
