Ingredients:

1 lb Nolan Ryan Beef Ground Chuck

1/3 cup smoked Hatch Green Chile peppers, diced
- 1 tbsp Nolan Ryan Beef Fajita Seasoning

1 tbsp butter

1/3 cup diced red onion

1 tbsp flour

1 cup of light beer
-
1 cup of cheddar cheese, shredded or cubed
- 1 cup of pepper jack cheese, shredded or cubed
- 1 block of cream cheese, cubed
Instructions:
- Season ground chuck with Nolan Ryan Beef fajita seasoning. Brown the ground chuck over medium high heat.
- Heat up butter in a medium saucepan over medium heat, then add onion. Let it soften and then add the ground chuck and smoked chilies.
- Add the flour and stir together for 1 minute.
- Add the beer and bring to a simmer, then reduce to low.
- One at a time, add in the cheeses and let them melt together.
- Stir until combined. Garnish with excess ingredients and enjoy!
