Creamy Tortellini Soup

Cook Time: 45 minutes 

Serves: 6-8

Ingredients:

  • 1 lb Nolan Ryan Beef Ground Chuck
  • 1 jar of sun-dried tomatoes 
  • 2 shallots, diced
  • 1 tube of tomato paste
  • 2 cups of frozen spinach
  • 1 20oz package of pre-made cheese tortellini
  • 1 32oz carton of chicken broth 
  • 1 cup of white wine
  • 1 cup of heavy whipping cream
  • .25 cup of parmesan + extra for garnish 

 

Instructions:

 

  1. Preheat a large soup pot to medium high heat. Add your ground chuck, oil, shallot, sun-dried tomatoes, and cook until ground beef is done. 
  2. Turn up the heat and add broth, wine, spinach, and parmesan and simmer 5-10 minutes. 
  3. Add in the pasta and heavy whipping cream and cook according to package instructions. 
  4. Garnish with more parmesan cheese if desired and serve!
