Spicy Chorizo Burger with Queso Asadero

            Spicy Chorizo Burger with Queso Asadero

Prep Time: 20 minutes

Cook Time: 10-15 minutes

Serves: 8

Ingredients:

  • 4 packs of 1lb Nolan Ryan Beef Ground Chuck Patties
  • 8 burger buns, toasted
  • 1 lb Fresh Mexican Chorizo 
  • 2 large yellow onions, sliced 
  • 1 lb Asadero Cheese, shredded 
  • Salt and pepper
  • Outer leaves of iceberg lettuce 
  • 2 large tomatoes, sliced 

Instructions:

  1. Preheat the grill or grill pan to medium-high. If using a grill, lightly oil the grill grates.
  2. In a cast iron skillet, heat 1 tbsp of oil over medium-high heat and cook the chorizo until crisp. Drain off the fat and transfer the chorizo to a plate lined with paper towels. Set aside. 
  3. In the same skillet, saute the onions in oil until golden brown. 
  4. Place 8 Patties on a baking sheet and top with chorizo and queso asadero. Place the other 8 patties on top of the cheese and chorizo. Form a seal. Chill in the fridge for 5-10 minutes. 
  5. Grill the burgers for 5-7 minutes. 
  6. Form the burgers with lettuce, tomato, and caramelized onion and enjoy!
