4 packs of 1lb Nolan Ryan Beef Ground Chuck Patties
8 burger buns, toasted
1 lb Fresh Mexican Chorizo
2 large yellow onions, sliced
1 lb Asadero Cheese, shredded
Salt and pepper
Outer leaves of iceberg lettuce
2 large tomatoes, sliced
Instructions:
Preheat the grill or grill pan to medium-high. If using a grill, lightly oil the grill grates.
In a cast iron skillet, heat 1 tbsp of oil over medium-high heat and cook the chorizo until crisp. Drain off the fat and transfer the chorizo to a plate lined with paper towels. Set aside.
In the same skillet, saute the onions in oil until golden brown.
Place 8 Patties on a baking sheet and top with chorizo and queso asadero. Place the other 8 patties on top of the cheese and chorizo. Form a seal. Chill in the fridge for 5-10 minutes.
Grill the burgers for 5-7 minutes.
Form the burgers with lettuce, tomato, and caramelized onion and enjoy!
