2-2.5 lb Nolan Ryan Tri-Tip

Instructions
Prep the Meat:

Bring to room temp: Remove tri-tip from refrigerator 45 minutes before grilling.

Pat dry: Pat meat completely dry with paper towels.

Season: Rub all sides with olive oil. Season generously with salt, pepper, and garlic powder. If using fresh herbs, place sprigs on top.
Grill the Tri-Tip:

Preheat grill: Heat grill to high (450-500°F). Clean and oil grates well.

Sear: Place tri-tip fat-side down on the hottest part of the grill. Sear for 4-5 minutes without moving. This develops a beautiful crust.
