Paris Coffee Shop Pecan Pie

3 Tbsp. unsalted butter, melted

2 Tbsp. pure vanilla extract

1/2 cup brown sugar, packed

2 large eggs

1 1/2- 2 cups of pecan pieces (not halves)

3/4 cup light Karo syrup

1 pre-made 9-inch pie shell


Preheat the oven to 375°F.

In the bowl of a standing mixer, or using a hand-held mixer and a medium bowl, cream the butter and vanilla until it becomes a paste.

Add the brown sugar and beat until fully mixed with the butter and vanilla.

Add the eggs one at a time and beat to combine.  Continue beating until almost frothy.

Stir in the pecans with a wooden spoon.

Pour the filling into the pie shell and bake until the top is brown, 40-45 minutes.
